IIHM Hyderabad hosts Indo-French food fiesta

After a delightful Indo-French culinary experience crafted by IIHM students, Hyderabad exclaims: ‘Joie de vivre!’

On a breezy Hyderabad evening, Phoenix Arena transformed into a living tapestry of aromas, colours, and music as IIHM Hyderabad unveiled its annual Indo–French food festival Mystical Mélange.” The air was thick with the scents of slow cooked spices, freshly baked breads, and buttery sauces, as 70 young culinarians -third-year students of the Hyderabad campus—stepped into their moment of glory.

Over 40 remarkable culinary creations took centre stage, each plated with the finesse of a Parisian brasserie and infused with the familiar warmth of Indian kitchens. More than 400 guests—diplomats, hoteliers, industry leaders, and proud families—wandered from counter to counter, savouring, praising, and often pausing just to admire the artistry on display.

The menu read like a passport between continents.

Silken Brochettes du Chef, grills glistening under warm lights.

Flaky Chicken Tikka Vol-au-Vents, where puff pastry rose like golden petals around spiced perfection.

Handcrafted pastas folded live, bathed in classic French sauces, then kissed with desi hints that lingered on the tongue.

Forkful after forkful, flavours danced—delicate, bold, nostalgic, and new. French precision met Indian instinct; technique bowed to tradition; and every dish seemed to carry a story.

Amid the hum of happy diners, Dr. Suborno Bose, Chairman of IIHM, captured the heartbeat of the evening: “Hospitality is not just an industry; it is a celebration of human connection. At IIHM, excellence is a daily discipline—and we prepare students to become global hospitality leaders who stand tall anywhere in the world.”

“Mystical Mélange” was more than a festival. It was proof of IIHM’s philosophy coming alive—learning that steps out of classrooms and onto the world stage. These students didn’t merely follow recipes; they built menus, managed live counters, interacted with guests, and executed a full-scale event with a sense of ownership that mirrors the industry itself. 

This is why IIHM stands among the finest hospitality institutes in the world: a place where real kitchens replace theory, real guests replace hypothetical scenarios, and confidence grows from doing.

Under the watchful mentorship of Chef Sanjay Kak and Campus Director Earnest Immanuel, the students rose to the challenge with flair and humility. They demonstrated that the hospitality of tomorrow is shaped by imagination as much as skill—and that innovation, when paired with service, becomes something magical.

As the final plates were cleared and satisfied smiles lingered, one spirit remained in the air—an exclamation that could only be French, and only felt after a meal crafted with heart:

“Joie de vivre!”

And in that moment, Hyderabad meant every word
