IIHM and IIPC students celebrated World Chocolate Day

Chocolate is more than a delicious indulgence—it is a craft that blends science, creativity and precision. Celebrating this universal favourite, the International Institute of Hotel Management (IIHM) marked World Chocolate Day on 7th July with exciting chocolate masterclasses, live demonstrations and interactive learning sessions across all its campuses. The celebrations brought together IIHM and IIHM Institute of Patisserie & Culinary (IIPC) students, giving aspiring chefs an opportunity to explore the fascinating world of chocolate through practical experience.

At the IIHM Global Campus, students enjoyed an immersive session conducted by the institute’s expert patisserie faculty. The live demonstrations showcased a range of professional chocolate creations, including elegant bonbons, rich truffle chocolates, artistic chocolate swirls, beautifully decorated cupcakes with chocolate toppings and colourful chocolate lollipops. Students watched every step before getting hands-on experience themselves, making the session both educational and engaging.

Speaking on the occasion, Dr. Suborno Bose, Chairman of IIHM, emphasised that chocolate craftsmanship combines creativity with technical expertise. He noted that understanding the science behind ingredients is an integral part of culinary education and prepares students for professional excellence.

The celebration was highly interactive, with students actively participating in demonstrations, asking questions and showcasing their own chocolate creations. Faculty members guided them through every stage, sharing professional tips and industry techniques that are essential in modern bakery and confectionery.

One of the highlights of the celebration was learning the science behind perfect chocolate. Students explored the traditional double-boil method of melting chocolate, mastered the quick stovetop technique for preparing smooth, fudge-like dark chocolate, and learnt the importance of correct mixing, melting and temperature control to achieve a glossy finish and the perfect melt-in-the-mouth texture. They also experimented with flavoured chocolates, creative toppings and decorative techniques that transformed simple ingredients into eye-catching desserts.

Chocolate Day at IIHM Bangalore

The same enthusiasm was witnessed across all IIHM campuses, with each campus organising unique learning experiences to mark World Chocolate Day. At IIHM Bangalore, hospitality students and IIPC learners participated in a specialised workshop titled “Mastering the Art of Chocolate – From Bean to Bar.” Conducted by Chef Gnanesh Kumar, Pastry Chef Lecturer, the session introduced students to the complete journey of chocolate—from cocoa processing and cocoa butter to tempering, glazing, moulding and decorative finishing techniques.

Students also observed the preparation of chocolate gateaux, pralines, chocolate bars and a spectacular chocolate fountain demonstration, gaining valuable insights into achieving the ideal consistency, shine and stability of chocolate. Chef Sanjay Kak, Culinary Director at IIHM, explained how even slight variations in temperature can dramatically influence the quality, texture and appearance of chocolate, reinforcing the importance of precision in professional kitchens.

Beyond practical skills, students also discussed the nutritional benefits of dark chocolate, sustainable cocoa cultivation, responsible sourcing and ethical chocolate production—topics that are becoming increasingly important in today’s global culinary industry.

By celebrating World Chocolate Day through experiential learning, IIHM once again demonstrated its commitment to industry-focused education. The celebrations not only enhanced students’ technical knowledge but also inspired them to explore the limitless possibilities of chocolate artistry—one delicious creation at a time.
